I got off work at 9:00pm today & I wanted to make a healthy, non-heavy and QUICK dinner for my family. This dish only takes 30 minutes to make & yes, it’s filling without the heavy food coma feeling.
Baked Salmon:
- 1/2 salmon
- garlic salt
- pepper
- Mrs. Dash lemon pepper seasoning
- cayenne pepper
Preheat oven to 400 degrees F. Place the salmon on the center on the cookie sheet that is covered with alumium foil. Add a tablespoon(at most) of olive oil. Add all seasonings on top of the salmon to desire. **sorry, I just eye balled everything. on a medium salmon, I add at most 2 tablespoons of each seasoning on top of the salmon. Bake for 25 minutes.
While you’re waiting for the salmon, you can start with the spinach stir fry!
Spinach Stir Fry( for three people):
- 4 cups of spinach
- 1/2 diced onions
- 1 cup of mushrooms
- 2 cups of broccoli
- garlic salt
- pepper
- 3 tbsp soy sauce
- 2 tbsp olive oil
In a medium heat frying pan add 2tbsp of olive oil and saute the onions, mushroom and broccoli. Sprinkle garlic salt and pepper lightly. Add spinach and soy sauce and mix until the spinach is somewhat soft… & it’s ready!
