Spinach Polenta Pizza

Since it’s finally 2012, I promised myself last year that I would allow myself to let go and eat whatever I want throughout 2011, but as soon as it hits 2012 I would start eating healthy. This isn’t a diet thing, or a thing where I want to be skinny, it’s more like… I don’t want to get diabetes, heart problems, high blood pressure or risk getting a stroke since it runs in my family. 
Eating healthy doesn’t always mean starving or cutting down on the good stuff, this pizza is an example of having the best of both worlds.  Not only is this healthy, but it taste great and fills you up.I don’t have a round pan dish(yet) so I customized  the recipes a little bit(it won’t match the one online!)
Makes 3-4 Servings
1 tbsp extra virgin olive oil
1 cup almond milk
2  1/2 cup water
1 cup coarse cornmeal
1 cup tomato sauce
Freshly ground black pepper
Cayenne pepper (optional, but gives the dish a kick)
Salt
Chopped Mushrooms
Baby Spinach
Chopped Yellow, Red, & Green Bell Peppers
Diced Onions
Diced Tomatoes
1 cup shredded fontina cheese
1/2lb of chicken (optional!)
Directions :
Spray a pie pan/baking pan with Pam cooking spray to grease. Set aside.
In a medium saucepan over medium-high heat, combine almond milk, water and salt. Bring  to a boil, reduce to medium heat, and add cornmeal, while whisking to prevent lumps from forming.
Turn heat to low and simmer, whisking frequently for about 10 minutes  *if mixture becomes too thick, whisk in a bit more water
Turn off heat. Stir 1 tbsp olive oil into cooked cornmeal and pour into prepared baking pan; spread it evenly. Cover with plastic wrap and put it in refrigerator until it is firm (overnight or at least over 1 hour) *IF YOU DO NOT LET IT SET IN THE FRIDGE, IT WILL BE SOGGY WHEN YOU BAKE IT, SO WAIT AT LEAST AN HOUR!
While waiting for cornmeal to cool:

In a small sauce pan, saute diced onions, diced garlic and chicken breast with AT MOST a tablespoon of olive oil.
Add tomato sauce & mix with salt, pepper and cayenne pepper.
When polenta is done:
Take polenta(cornmeal mixture) out of the fridge. Heat oven to 450 degrees F
Put polenta in oven covered with tomato sauce mixture and bake for 20 minutes (depending on how deep your baking dish is)
Take polenta out of oven and add all your vegetables & top it evenly with the fontina cheese.
Put it back in the oven for 5-10 more minutes
& It’s ready to eat! Add or take away any vegetables or meats or even sea food, but remember to keep it lean and not add any processed meats if you want to keep this pizza dish healthy. Have fun!
